The holidays are about spending time with family, and a big component of that is sharing a special meal. Let BBQ Pitmaster Matt Pittman show you how to wow your family and friends this holiday season with his Smoked Sweet Potato Casserole. Smoked on a pellet grill, this dish will leave those around the table yearning for more.
Smoked Sweet Potato Casserole
Prepare your Smoker Prepare your grill or smoker and heat to 350℉.
Prepare the Potatoes Poke several holes in the sweet potatoes using a fork or small knife and then place directly on the grill grate.
Cook the potatoes until they are soft, which will take about an hour at 350℉.
Remove the potatoes from the grill. Slice open and scoop out all the flesh into a disposable steam pan, baking dish or cast iron skillet.
In a medium mixing bowl, mix one stick of melted butter with the brown sugar, vanilla and Holy Cow BBQ rub. Pour this mixture over the potatoes and top with marshmallows. Drizzle with ½ stick of melted butter.
Finish the Casserole
Place the baking dish back into the smoker for 15 minutes. When the marshmallows are golden brown pull the dish out. Allow to cool and enjoy!
